Plant-based Ceviche / CeviCHOCHO

Ceviche de Chocho or Cevichocho is a traditional dish of the Ecuadorian Andean region made using fibrous and protein filled chocho with fresh, local veggies to make this bright and flavorful dish. It can be eaten as a refreshing summertime meal or as an appetizer with a side of plantain chips. 

Ingredients: 11                     

Time: 30 minutes                    

Portions: 6-8


  1. 1.5 cups  Salted Chocho Snacks
  2. 2 cups orange juice
  3. 1 green bell pepper
  4. 1 red onion
  5. 2 large tomatoes 
  6. ⅓ cup parsley 
  7. ⅓ cup cilantro 
  8. 4 tablespoons tomato sauce
  9. 4 tablespoons of lemon juice
  10.  1 teaspoon of sugar
  11.  Salt for taste












To start, soak the chocho in the lemon juice, ½ cup of orange juice, and a pinch of salt for 5 minutes, set aside. Next, dice the onion and bell pepper, then cut tomatoes into small cubes (about ½ inch by ½ inch). Mix together the onion, pepper, and tomatoes with the rest of the orange juice. Dice the parsley and cilantro and add it together with the tomato sauce, sugar, and salt in a separate bowl. Finally, mix all your prepared ingredients together and you have yourself a super easy and flavor packed dish!
