Chocolate Glazed Banana Chocho Pastries
We all know that bananas and chocolate are a perfect combination, but combining chocolate, banana, and Chocho creates a delicious and nutrient-rich trifecta. Give these Chocolate Glazed Banana Chocho Pastries a try, and share your creation by tagging @mikunafoods.
DOUGH:
2 1/2 cups of all-purpose flour (¾ cup of coconut flour)
1 tsp. of sugar or Swerve
1/2 tsp. of salt
2 sticks of cold unsalted butter, cut into small pieces (can substitute with 1 cup of coconut oil)
1/4 cup of ice water
In a bowl mix flour, sugar, and salt. Add pieces of butter until you can only see a few pea-size chunks of butter. Add water and mix until the dough is a little bit crumbly. Add more water if you need to. Make two balls of dough. Wrap and refrigerate for at least 1 hour.
FILLING:
2 large bananas, preferably ripe and brown
1/3 cup of Mikuna Chocho Superfood Protein powder
1 Tbsp. of sugar or swerve
1/2 tsp. of maple syrup
1/2 tsp. of vanilla
1/2 tsp. of cinnamon
1/4 cup of water
Mix bananas, maple syrup, vanilla, cinnamon, and water in a bowl. Slowly add Chocho powder to mixture and stir until completely combined.
CHOCOLATE GLAZE:
1/2 bar of Ghirardelli 100% cacao chocolate bar
1/2 Tbsp. of butter or coconut oil
1/4 tsp. of vanilla
ASSEMBLY:
Pull dough into 4-inch circles that are about ⅛ inch thick. Put 2 scoops of banana filling on top of the dough. Cover with another dough circle and pinch the sides or use a fork to close them. Poke holes in the top, cover in egg or butter, and bake for 15 minutes or until golden brown. Let cool for 8 minutes. Drizzle chocolate glaze on top of your pastry, and enjoy!
