This healthy twist on the St. Paddy’s Day classic might sound a bit strange with spinach, avocado, dark chocolate, and mint, but trust us — it’s as delicious as it is festive, and it’s packed with clean plant protein, vitamins, minerals, and fiber.
1 cup of oat milk (we used Chobani Vanilla!)
⅓ cup of Mikuna Chocho Superfood Protein (Cacao)
1 cup of fresh spinach
1 small banana
½ of a small avocado
3 Tbsps of HU mint dark chocolate gems
2 scoops of vanilla coconut Vital Protein collagen
3 mint leaves
Blend on medium until fully combined.
Then blend on low until desired texture and thickness.
Top with coconut flakes and mint chocolate chips, and enjoy!
