Nutrient-Dense Chocho Banana Bread
Looking for something delicious enough to be a dessert, light enough to be a quick snack, and healthy enough to have for breakfast? This delicious Chocho Banana Bread recipe is full of whole food nutrition, free from gluten and refined sugar, and can easily be made vegan. (And it tastes so good, you’d never know it!)
INGREDIENTS:
1 cup of Mikuna Chocho Superfood Protein (Pure Chocho)
1 cup of coconut flour
1 Tbsp. of maple syrup (or honey)
1½ tsp. of baking powder
½ tsp. of baking soda
a pinch of salt
⅓ cup of olive or coconut oil (or grass fed butter)
1 tsp. vanilla extract
4 large mashed ripe bananas
⅓ cup of nut or seed (or whole) milk
Optional:
* ½ – ⅔ cup of chopped walnuts or pecans
* 1 tsp. of cinnamon
* add 2 eggs and remove the baking soda and milk
* extra banana split down middle to put on top (because it looks pretty!)
DIRECTIONS:
Add all ingredients to a blender or bowl. Blend or mash on low until fairly well blended but still a little chunky.
Preheat your oven to 375 degrees. Spread a small amount of oil on a baking pan. Then bake for 45 minutes or until golden.
Let your bread cool for at least 20 minutes before slicing. Add your favorite creamy topping, or enjoy it as-is!
