2 28 oz. cans of crushed tomatoes
1 sweet potato, peeled and diced
½ cup red lentils
2-3 cloves of garlic
1 tsp salt
1 tsp dried oregano
1 tsp olive oil
2 ½ cups water
⅓ cup Mikuna Chocho Superfood Protein Powder Original
Sauté the garlic, oregano and salt in olive oil
Stir in the cut sweet potato and lentils, and cook for a few min.
Add water, then bring to a boil, and reduce to a simmer.
Simmer for 10-15 minutes until the lentils are soft.
Add in crushed tomatoes, Chocho and simmer for another 5 minutes to let the sauce come together.
Serve as desired (we like it served over zucchini noodles)
