
These fluffy, lightly sweet, and built on a single-ingredient protein with a complete amino acid profile. Pair Mikuna Pure Chocho with paleo flour for a grain-free stack, or swap in all-purpose for a softer, more traditional crumb. Either way, you get roughly 30 grams of protein in a serving serving before the maple syrup lands.

Ingredients
- Mikuna Pure Chocho — ½ cup
- (all Mikuna SKU works; Vanilla and Cinnamon Horchata bring their own flavor notes)
- Bob's Red Mill Paleo Baking Flour — ½ cup (or organic all-purpose flour for a non-grain-free version)
- Aluminum-free baking powder — ¾ tsp
- Organic Ground cinnamon — ½ tsp
- Sea salt — ¼ tsp
- Organic Almond milk or water — ⅓ cup
- Organic eggs — 2
- Organic Maple syrup — 2 tbsp, plus extra for serving
- Organic Vanilla extract — ½ tsp
- Organic Coconut oil — 1 tbsp, melted, plus extra for the pan
- Organic Fresh blueberries and raspberries — ½ cup, optional, for topping

Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the Mikuna Chocho Plant Protein with the Paleo Flour (or All-Purpose flour), organic baking powder, organic ground cinnamon, and organic salt until well combined.
- Combine Wet Ingredients: In a separate bowl, mix the organic almond milk, organic maple syrup, baking powder, organic vanilla extract, and melted organic coconut oil until smooth.
- Form Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid over mixing to keep the pancakes fluffy. The batter should be thick but pourable; add 1–2 tbsp more almond milk if too thick.
- Heat Pan: Preheat a non-stick skillet or griddle over medium heat and lightly grease with organic coconut oil.
- Cook Pancakes: Scoop 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface and the edges look set. Flip and cook for another 1–2 minutes until golden brown and cooked through.
- Serve: Stack pancakes on plates and top with organic maple syrup, organic fresh blueberries. Serve warm.
