Chocho (Lupinus mutabilis) is an Andean legume cultivated for thousands of years in Ecuador, Peru, and Bolivia. Mikuna Chocho is dehulled, debittered using a traditional water-based soaking process, and milled. No chemical solvents, no protein isolation.
