Creamy Chocho Soup
INGREDIENTS//
- ⅜ cup of Mikuna Chocho Superfood Protein Original
- 3 ⅓ cups of russet potatoes peeled and diced
- 2 ¼ cups chopped leeks
- 2 tbsp olive oil
- 4 ¼ cup vegetable broth
- 1 tsp sea salt
METHOD//
- In a medium pot, heat up the olive oil
- Add the leeks to the pot and cook for 5 minutes
- Add the rest of the ingredients and bring liquid to a simmer
- Simmer until the potatoes are tender
- Blend everything in a blender until smooth
- Taste and season with salt if needed
- Serve in a bowl topped with a drizzle of olive oil
