Creamy Chocho Soup

  • ⅜ cup of Mikuna Chocho Superfood Protein Original
  • 3 ⅓ cups of russet potatoes peeled and diced
  • 2 ¼ cups chopped leeks
  • 2 tbsp olive oil
  • 4 ¼ cup vegetable broth
  • 1 tsp sea salt


  1. In a medium pot, heat up the olive oil
  2. Add the leeks to the pot and cook for 5 minutes
  3. Add the rest of the ingredients and bring liquid to a simmer
  4. Simmer until the potatoes are tender
  5. Blend everything in a blender until smooth
  6. Taste and season with salt if needed
  7. Serve in a bowl topped with a drizzle of olive oil
